Pregnancy has a way of making you hate certain things you used to love. Like Chipotle and coffee. Michael was very disappointed when I couldn’t stand the site of a burrito from Chipotle. And I was very disappointed when coffee – my favorite thing in the world suddenly became gag-worthy and bitter. I haven’t enjoyed a hot cup of coffee for over a year and even now that baby is here I still don’t like the taste of it. Although we’ve been looking into getting a better coffee maker.
I wasn’t about to go two years without drinking coffee so I’ve substituted hot coffee for cold coffee – and if you’ve ever made iced coffee (by making a pot of hot coffee strong and putting it over ice) it’s bitter and I personally never liked it. But I started experimenting with making cold brew (by putting grounds in water and letting them soak over a period of time) and the result is amazing, smooth, delicious coffee.
I’ve been making my batches at night in a 16oz mason jar and soaking about 1/3-2/3 cup coffee grounds in water filling the jar – the ratio depends on how dark you like your coffee. Then I add a splash of whole milk and a couple ice cubes and whalla! You have delicious, smooth coffee perfect for summer!
- 1/3 Cup Coffee Grounds
- 16 Oz Water
Add water to the grounds and soak overnight.
Strain using a cheesecloth and pour through in the morning.
If you don't have a cheesecloth you can use a coffee filter and pour through. If this is your only option I'd recommend using your coffee maker without turning it on and pour through the top to avoid dripping coffee.
Experiment with flavor by adding more grounds and different roasts. I've found I like the lightest roasts with iced coffee.
